Shanghai barbecue basted beef eye fillet on a bed of sticky sesame soy brown rice with five spice mushrooms, and a mountain of steamed greens. Topped with a ginger carrot relish and toasted sesame seeds. Miniature carrot cake with fresh berries for dessert.

Baked Tasmanian salmon with dill on a warm salad of pearl barley, baby purple chard, zucchini, shaved fennel and roast beetroot topped with horseradish mustard vinaigrette, chopped walnuts and caper berries. Double choc brownie, vanilla yoghurt and smashed berry mess for dessert.

Vegetarian/vegan option: served baked Caribbean-spiced cauliflower.

Golden baked chicken in a Caribbean rum and herb basting on brown rice with a black bean and corn salsa, steamed greens, and crunchy capsicum. Served with coriander yoghurt and a wedge of fresh lime. Topped with spiced toasted coconut curls. Bite-size lemon coconut ricotta cheesecake for dessert.
